![]() Mac Ritter, Outer Banks Chef Outer Banks Shrimp Scampi INGREDIENTS 2 lbs. Dare County shrimp, peeled and de-veined 1 tbsp. olive oil 4 large garlic cloves, chopped fine ¼ cup white wine ¼ cup chicken broth ¼ tsp. salt 1/8 tsp. ground black pepper 2 tbsp. fresh lemon juice 2 tbsp. chopped fresh parsley 4 tbsp. cold butter TO COOK Heat oil in sauté pan, add garlic, and sauté for 1 minute. Add all other ingredients except butter, and cook over medium-high heat for 4-5 minutes until shrimp are done. Remove shrimp with slotted spoon to warmed serving bowl, and reduce sauce by half. Add butter to sauce, stirring until melted. Pour sauce over shrimp and serve immediately. Serves 4. |
